Sausage Party - Hunt and Fish - 11-09-2017 Had some time today and wanted to clean out the freezer so I made some sausage. I did two different types today. The first I made was venison summer sausage. 4lbs venison 1lb fat and all the seasonings that go along with it. Ground it all up, packed in the casing and off to the fridge. The second I did was kielbasa. This was my first time making kielbasa so let's hope all goes well. Again a 5lb batch because that's what my stuffer will hold. 4 lbs of wild boar and 1 lb of fat. This recipe came from Hank Shaw he has some great stuff if you are into cooking. Ground it all up packed into casing and then the fridge. Got my smoker fired up and let the keilbasa hang for an hour while the smoker came to temp. 4 hours later both are done and I am hungry. Once they are cool I will be enjoying some tonight.
