So this recipe was given to me years ago via the guys on the Jose Andrés.  Thise who know will understand the boat and crew.

Step 1. Limes lots. Haha, enough to cover the fish.
Step 2. Cut fish into 1/8 or 1/4 inch chuncks
Your choice on fish
Step 3. Mix fish in lime juice. While preparing other parts.
Step 4. Now this is where I cheat. Instead of cutting everything up I buy the Pico De Gallo, usually 2 large containers.
Step 5. Green olives, dice up and some of the juice, about 12 or 14 olives and 1 oz of juice.
Step 6. Mix 4 and 5 together with some garlic,Tabasco and anything else you might like.
Step 7. Mix everything together refrigerator for 4 hours.

Final step 8. Enjoy with some tortilla chips and a beverage of your choice.
