Rabbit larb "Thai ground rabbit meat salad"

My buddy keep hunting them rabbits, and I keep cooking em........ Tongue

Ingredient

1.5 lb ground rabbit meat
3 tbs fish sauce
3 tbs fresh lime juice
2 tbs toasted rice powder. "toast rice in pan til brown then grind"
1 tsp crush pepper
1 tsp sugar
mint leave
onion slice "red one is best"
cilantro
carrot

Ground rabbit meat.
   


All ingredient all slice up.
   


Cook rabbit meat in pan. Add a little water to help cook meat trough.
   


Put meat in mixing pan. Put rabbit meat, and all ingredient in. Mixed together. Add more of less fish sauce and lime juice depending on your taste. I like to do equal part of the two. If like more spicy add more crush pepper.
   


Serve with side of ice burg lettuce, and sticky rice. Good to go.

That was good stuff. The dish taste much better with ground pork though. Rabbit meat is a bit too dry.

Add a little pork fat when you grind it or a tad bit of lard....
